Cherry Topping

Use this topping on cheesecake, ice cream or as a filling for cherry pie.


Recipe Details

    1. Combine the cherries, sugar, water, and almond extract in a medium saucepan over medium heat. Cook, stirring often, until the sugar dissolves. Bring to a boil and cook 1 minute.
    2. Stir in cornstarch that has been dissolved in 2 tablespoons water; return to a boil and cook until thickened, 1 minute.
    3. Transfer to a bowl and chill 2 hours.
    4. Spread cherry mixture over the top of your favorite cheesecake.

    1. This is too sweet for my taste. Next time I make it, I will use half as much sugar. I added lemon juice to try to balance the sweetness. Also, before adding the water-cornstarch mixture, add a little warm liquid to it, stir it, and then add to the hot cherry mixture. Otherwise, you have big cornstarch clumps.
